Professor Li He from BTBU' s School of Food and Health Wins First Prize
Recently, the 4th Boao Health Food Science Conference & Expo (FHE2026) concluded successfully in Boao, Hainan. The conference established the "Young Scholars Innovation Competition" for the first time. Professor Li He from BTBU’ s School of Food and Health participated with his project "Key Technology Development and Industrial Application of the Whole Chain Processing for Specialty Plant-Based Meat". After intense competition through preliminary evaluation, online review, panel assessment, and on-site defense, he ultimately stood out and won the competition's sole First Prize.

This "Young Scholars Innovation Competition," themed "Health Food Science and Technology Innovation Led by New Quality Productive Forces," aimed to build a communication platform for outstanding young scholars in the national food field, stimulate innovation vitality, identify innovative talents, and incubate innovative achievements. The competition attracted participation from numerous excellent young scholars, featuring fierce competition and rigorous evaluation, representing the current innovative strength and cutting-edge level of the younger generation in China's food science field.
The award-winning project closely aligns with the national "Greater Food" strategy, directly confronting the challenges of China's protein supply and the technical bottlenecks in the development of the plant-based meat industry. The project team comprehensively broke through the four key technological links: "simulated lean meat - simulated fat - biological recombination - efficient equipment". They pioneered core processes such as multi-stage extrusion recombination and biological enzyme high-pressure field coupled restructuring, effectively solving industry pain points like the lack of fibrous texture in plant-based meat, poor flavor, and unsatisfactory cooking adaptability. The project resulted in a total of 32 patents, with the overall technology being recognized as internationally leading. It has made significant contributions to the deep development of China's plant protein resources and the advancement of the health food industry.
